  • I BAKED?!


    Scary isn’t it? haha


    No seriously…do y’all remember me telling you about my last attempts to bake a dessert?  It was last year at Thanksgiving…I was trying to make canollis…and couldn’t do it to save my life!


    Well…y’all would be QUITE proud of me.


    A co-worker of mine brought in a batch of orange-cashew biscotti.  You know…like the kind you can buy at Starbucks for outrageous prices! It was wonderful! She made it herself…I was a bit shocked and excited about the thought of that. 
    The reason being…I thought that it would make a wonderful surprise for
    Jason.  He LOVES coffee…and Starbucks…so, I thought it would be really cool if he had biscotti to go with his coffee…without having to pay the ridiculous prices.


    She talked me into trying to make it myself…to which of course I replied with “I can’t bake”.  Well, after a while…she finally talked me into attempting it.  I decided to make honey-almond biscotti.



    Let me just say that…it turned out just like the picture…and tasted as good as I’ve ever had!!


    I walked around for about 10 minutes last night saying, “I can bake…I CAN BAKE!!”


    I know…I’m nuts…buy hey, I was proud of myself okay.


    I had Jason try some…he loved it and I brought some into work…and they all said that it was fabulous!  Woooohoooo!!  I am a happy little clam!


    I learned something new y’all!


    If any of you are interested in making some yourself…you can find TONS of recipes on the internet…but, start here. There are over 50 recipes there…and they are wonderful!!


    Okay…now that I have shared my little baking adventure with all of you.  Thanks for the encouraging words regarding the LOAD of filing that I have been working on…and have to finish today.  


    BUT…today IS FRIDAY!!! YAY!!

  • Congrats! I made chocolate chip biscotti once..they came out really good..But cannolis I would never attempt..you’re brave!

  • Woohoo! Congrats! I love biscotti. A little tip – for extra yumminess, melt some chocolate and dip one end (up to about 1/4 of the biscotti). Lay them on a wire rack with wax paper underneath, chocolatey edges hanging over the side so you don’t get rack-marks. It’s fabulous!

    To melt chocolate and not burn it, fill a pot with water, about 1/2 full, and start it boiling. Get a metal bowl about the same size, one that will fit over the pot nicely, and melt the chocolate in the bowl, stirring lots. Or, use a double boiler, if you have one. (I don’t, so the bowl and pot works for me )

  • Yum!!! Baking is like science, follow the directions, and you usually get the expected results. But you can’t vary the things too much, or the experiment will go wrong…LOL

  • wow!  awesome biscotti!!  i tried my hand in baking too over thanxgiving and made a tiramisu =P  eehhe…  i added too much rum, but at least the lady fingers came out good =P  lol…  keep up the baking n have fun!!!  God bless dear!

  • Congratulations!!!   I love to bake.  Usually by this time of year I have baked 5 or 6 pound cakes and have them in the freezor ready when ever I need them.  I did make a chocolate pound cake a few weeks ago and took it to work and the girls loved it.  I’m sure I’ll be doing at least one more between now and Christmas. 

  • Way to go girl! ! !  I love baking.  I started baking at age 6.  I was a great reader then.  So I got to do the recipe and mom baked it.  I am a firm believer in if you want to bad enough you can do it.  The main thing to remember is the glass measuring cups are for liquid.  The measuring cups that come in sets of 4 are for dry measuring.  The rest is pretty easy.  Congratulations! ! ! !   You CAN bake! ! !   Have a great day and a wonderful tomorrow! ! !   Much love and hugs! ! ! !

  • Hi Lovie… WTG… I am a baker too… anything and everything. I love to try different cookies for the holidays too. I’ll be making some Tudd Nussies and posting pictures of them as I make them. Oooo they are scrumpious!
